I need some liquor help...
A veal recipe that I want to make calls for Calveras or congac in the sauce. I'm going with the congac because I don't think I'll be able to find any Calveras, and if I do, it'll probably be expensive. Unfortunately, I don't want to have to spend money at the butchers to get the meat butterflied AND buy a bottle of drinkable quality congac. My question is this: does anyone know of a cheaper substitue to the congac?

Why not just butterfly the meat yourself?

I'm not exactly sure how to- I'm just sixteen. Even so, veal is somewhat expensive, and I only have so much time.

It's so easy to butterfly beat.
You just slice it in half, kind of fillet it, but don't cut all the way through. Pretend you're working at a subway and ctting a sandwich open.

I'm not going to be getting the liquor- one of my parents would get it for me. I've never actually been taught to butterfly anything, so therefore, I can't have forgotton how to do it.
