I like cooking for da family. I'm not better than the next guy, just that I can read directions. But this thread isn't about how cool I am at the stove, but to perhaps offer a revelation to cheap spending equal awesome dinners. Maybe think before spending buku bucks at the diner with your date, instead impress her with these meals. You might get more than a standard blow job.

Today czar cooked:
Chicken and Asparagus roll-ups.

Ingredients:
1 pound fresh asparagus
4 boneless skinless chicken breast, pounded thin
2 tablespoons flour
1 clove garlic, minced
1 teaspoon salt, divided
1/2 teaspoon dried thyme, divided
1/4 teaspoon paprika
1/8 teaspoon pepper
2 cups sliced onions
3 large fresh tomatoes, sliced
1/2 cup chicken broth

Directions:
1. Wash asparagus; break off each spear as far down as it snaps easily. Place 2 or 3 spears on each chicken breast. Roll; secure with toothpicks.


2. Combine flour, garlic, 1/2 teaspoon salt, 1/4 teaspoon thyme, paprika, and pepper; mix well. Roll chicken breasts in mixture.

3. Place onions and tomatoes in bottom of 13x9-inch baking dish; reserve 8 slices of each. Place chicken breasts over sliced vegetables. Arrange reserved slices of tomato and onion over chicken.

4. Combine chicken broth and 1/2 teaspoon salt and 1/4 teaspoon thyme. Pour over chicken and vegetables. Cover loosely with foil. Bake in 350 F oven 45 minutes; baste occasionally with juices in bottom of dish. Uncover; bake 15 minutes or until chicken and vegetables are tender.

I went to full time cooking healthy meals in December. For my family mind you. Not for a pay check. The deal my wife and I made for each other was who ever made it home first, cooks. I usually beat everyone home.

For the longest time, we cooked crap and didnt know it was affecting me and my family's mood. Once I experimented eliminating processed foods, my family well-being magnified considerably. That turned me on and really dug into these recipe books my wife had. Kids are calmer, grades increased, and an erection that I use to hammer nails into steel. Something else, huh?

I'm just saying that eating asparagus isn't going to make your family's mood better or make your kids smarter. Obviously eating healthier is, well, going to be more healthy but don't try to sell it for more than it is. If you are noticing improvements in certain mental areas, what I am suggesting is that the power of suggestion is playing a bigger role than any actual change in diet.

Czar's stolen eggplant recipe.

1 eggplant (peeled, sliced thin)
2 tablespoon olive oil
1 loaf French Bread (sliced in half lengthwise)
1 can spaghetti sauce
1 8oz fresh mushrooms (Sliced)

Preheat oven to 400 F
Place the two halves of bread onto a non-greased cookie sheet. Pour some of the spaghetti sauce onto the bread and spread it around until it covers fully (about a 1/2 cup total for both halves)
fry the eggplant in a skillet with the olive oil. You might want to add more oil as the eggplant absorbs liquids well. Placed the fried eggplant onto both halves.
Fried da mushrooms in the skillet with the olive oil. Again, you might have to add more oil as you see fit. When finished, place them on top of eggplant. Pour the rest of the spaghetti sauce on top.
Finish by covering everything with the cheese and place your creation into the oven for 15to 20 minutes.
Oh hell yeah its yummy!

My uncle returned from Italy from being stationed there. He made this meal and it was very good. Why I remembered this so vividly was because I sat across his wife whose blouse was wet around the nipples (yeah breast feeding). I was 16.

If you don't mind, I think I'm going to steal those since my typical diet consists of salads and steak/chicken breasts which I grill once a week than refrigerate for the next 6 days. This gets boring after a little while...

Pacific Island Marinade

1 cup Soy Sauce (Kikkoman makes the best)
3 Tablespoon Vinegar
1 med Onion (Chopped)
1 Clove of Garlic (Chopped)
Salt and Pepper to taste

Combine all ingredients.

Just pour the stuff over your meat in a covered bowl or freezer bag and refrigerate at least 6 hours. You can even steep the meat overnight. No big deal. Then BBQ and enjoy!
Also, instead of meat, if you add chopped hot peppers, this marinade will turn into a hot sauce you’d pour over your rice.
Or better yet, and if you really like things hot, cut your raw beef into strips and marinade your raw meat with this hot sauce. Wait an hour for the chemical of the sauce to cook your meat and eat! When you use this hot sauce this way, make sure your bathroom is well stocked of things to read.

History
I learned this recipe from my ex wife brothers. They would BBQ a lot and so we hung out with them. They were like a rough and tumble lot, grew up fighting, smoked weed and drank beers. They didn’t care too much for ‘Hollys’. I wisely wasn’t a dick around them. They silently commanded respect. You know the types. Yet I never had to spend a dime for anything and they loved our kids.
So, if you ever care to try out this recipe, always think of me hiding my eyes behind sun glasses, trying to size these guys up by shifting my eyes over to them and wondering if I could last a minute in a melee, I could change their fucking Chamorro music they always played loud. The answer was always no.

Well, the soy sauce vinegar peppers onions garlic....yes. I’m still alive. Have cold ass beer as a chaser. You don’t have to go that extreme, thou. You can grill the meat for a minute before placing it in the marinade for starters. It has better texture and I prefer it that way.

I grilled chix tonight after using Lowry's tequila Lime chicken marinade....let them soak in it for a day and a half....sprinkled some garlic pepper on them while they were cooking

pasta with meatsauce...

2 12 oz cans of hunt tomato sauce
1 4-6oz can of tomato paste
1lb of ground bison
1-2 cloves garlic minced
oregano and basil to taste about 1/3 cup of dried spices NOT packed is good
1 tbsp xtra virgin olive oil
1 small finely diced onion

cook the ground bison in a decent size pot with diced onion
remove lids from cans: pour contents into pot
add spices and garlic

simmer covered on low heat
pour over your favorite pasta

Czar’s kitchen this weekend features Polish Easter Soup and Stuffed Grape Leaves.

I bought over 2 lbs of fresh Polish kielbasa at a local Polish deli. The lady there reminded me so much of my Grandmother. Like my grandmother, she looked like she could kick my ass verbally. Anyway, the soup recipe takes over a day to prepare. I’ll write a history and recipe of them later.

Just made some teriyaki burgers and they turned out awesome.

Ingredients:

2lbs lean ground beef
2 garlic cloves (chopped fine)
2 green onions (also chopped fine)
1/2 cup of teriyaki sauce
2 table spoons of hosin sauce
1/2 dry bread crumbs
1 egg

Cook garlic and green onion in a wok with vegetable oil (couple of tbs worth). Add teriaki sauce and bring to a boil. After it's boiled, let it cool down and then add to ground beef in a large bowl while still warm. Add hosin sauce, bread crumbs and egg. Mix well and form into 1/4 lb patties. You guys can probably figure out the rest.

I tried cedar planked salmon tonight on the grill, had some fresh steelhead. Found out that I don't much care for the flavor of cedar smoke.

Anyway, I have a whole shitload of leftover salmon now. Going to try some fish cakes, any other suggestions (other them omlettes) for left over salmon usage?

Poached Salmon Steaks
Toss your fish into a frying pan. Add a bay leaf, 1 chopped carrot, 1 tsp lemon juice and 1 parsley spring; season with your favorite spice. (Option…Add 1 small leek, thinly sliced)

Pour enough water to cover and bring to boil over medium heat.

Turn fish over and let stand 4 to 5 minutes in the hot liquid over low heat.

Meanwhile, in another pot, put some asparagus, mushrooms, red peppers, zucchini (Basically any vegetable combo to your taste). Add 1 tbsp butter, ½ cup white wine, 1 tbsp lemon juice. Cover and cook 3 min over medium heat. Remove veggies from wine liquid and set aside. Continue cooking liquid 2 to 3 min over high heat. Check and correct seasoning.

Remove salmon from pan and remove skin. Serve with veggies and pour the wine liquid all over everything!

I delayed and cooked them on the grill this afternoon....I let the pork ribs marinate for about 36 hours in the Hoison sauce, I also added some Sweet Baby Rays BBQ sauce and garlic salt since the Hoison was a little too sweet for me.

They turned out spectacular!!!

I no longer have time to cook. it is all about the women in my household cooking. My wife cooked a pork roast brushed with honey and Catalina dressing. It was fucking delicious. But i was busy playing the computer and never noticed how she made it.
