I'm working on the electronics for the RV at the moment. Here's the plan. Small PC built into the wall with a sound card. The sound card goes to an additional stereo jack in the wall. It then goes to a 12V amp and 6 12V 6x9s and 2 12V 12" subs. This should allow it to run on 110V or just 12V with an ipod.
Here comes the tricky part...
I'd like to use a touch screen monitor to run it. No problem right? Touch screen monitors don't have RCA or s-video inputs. It's just VGA or DVI. I need RCA inputs for my xbox360 and the satellite.
Any thoughts on how I can convert a signal? It may just come down to me buying an expensive ass TV AND a 8" touch screen panel. I'd like to avoid that if possible. Any thoughts will be helpful and I won't be a dick. Thanks.

Get a VIA micro ATX mobo.
Cheap, strong, reliable, even have SPIDF/RAW on them.

you've got a small PC already, it doesn't have a VGA port?
Might be worth getting a touchscreen overlay....

problem isn't VGA. The problem is I need to put s-video or RCA into a vga only input

There should be a video card that you can get that will let you input RCA or S-video into your computer.

I found a flat screen tv yesterday that has VGA, svideo and composite inputs. It looks like thats the easiest solution. I'll have to get a touchscreen overlay for it or scrap the idea all together.
