What you need:
- 1 box of Rice a Roni (or cheap knock-off brand) Fried Rice mix
- 1-4 chicken breasts, diced
- Peas
- Salt, pepper, garlic powder (you know, those really hard-to-find spices)
- Onion (how much depends on how many chicken breasts), cut
- Yellow mustard
- 2 large eggs
- Olive oil
- Parsley leaves, diced
==== Amounts are for one chicken breast, cuz I'm a loner ====
1) Pre-heat skillet for chicken on Medium heat. Add 1 tsp olive oil.
2) Prepare rice per instructions on package; simmer for the "upper limit" of the time range given (ex. "15-20 minutes," do it for 20). Keep the heat turned up slightly higher than needed to maintain a "simmer."
3) While rice is cooking, brown** diced chicken in pre-heated skillet. Season with salt, pepper and garlic powder (I basically browned both sides, and after turning seasoned again).
** Browning the chicken should take about 10-15 minutes; keep turning frequently. When chicken first starts to brown on first side, add cut onion and parsley leaves to pan.
4) Once chicken is browned on all sides, add 1/4 cup water and 1/4 cup peas to skillet. Season lightly with salt, pepper and garlic powder again. Bring to boil until most water is absorbed/evaporated. ++ Bring heat down to Warm.
++ If you have skillz like me, you will time this so it is done at the same time as the rice :-)
5) Once the rice is done, keep it on the burner and turn the heat up to Medium-High. Push the rice, which should be slightly browned on the bottom and "sticky", over to one side of the pan away from the main heat (I shifted the skillet off-center of the burner so the rice was as far away from heat as possible).
6) In the empty, heated portion of the skillet, crack two eggs and fry. Scramble in the pan while the egg white is still liquid on top. Almost immediately (it will cook very fast!), mix the scrambled eggs with the rice thoroughly.
7) Once the egg and rice is mixed, spread 3-4 thin rows of mustard across the top, then once again mix thoroughly. It may smell too strong at first, but trust me. ^^ The rice should be pretty clumpy - that's the idea!

You are now ready to have some damn good eating :D I call this "Poor Man's Chicken and Shogun Rice"

This was gooooooooood!!!! :yumyum: I almost mixed the chicken and peas with the rice, but I didn't want to lose the flavor of the chicken too much. Do as you please, but buyer beware!

ps: I may have added some stir fry sauce or teriyaki sauce to the chicken, but I am a single man and have no such fancy things....
