So I've been busy this past week cleaning smelt. Once a year we drive 3 hours to Lake Superior to part-take in the smelt run. Last year sucked we didn't get anything but wet and cold.
This year was different. it was approx. 36 degrees when we got there at 10pm. The water was probably just above 30. No wind which made it ideal. Major problem arose when we hit a deer just before we got there, shitty but the smelting must go on.

In Wisconsin you cannot use smelt for bait anymore. So we fry them up and eat them
It was High Life 40s in the wedding picture
This picture was Old Milwaukee Light (it is all my friend drinks) and I was no where near intoxicated that night...still had a 3 hour drive back home after we were done

No, the Old Milwaukee. I like smoked chubs, I've heard smelt can taste the same way.

1. With a scissors cut the head
2. Slit it from the anus to where the head was
3. Use your thumb to gut it
4. With water clean the slime off the outside, and make sure you have all the guts out.
5. Freeze in enough water so they do not get frost bit OR
make some beer batter - or some sort of flour based coating. Fry in a pan, deep fry or bake until golden brown. Eat
Pickled beets and Rye bread are traditional sides for the smelt
Oh and it is traditional for a rookie smelter to bite the head off one of the first smelt netted of the night!!! So Tofu was partially correct

I miss smelt Dipping! Don`t let anybody ever tell you that fishing is better in Texas then the Great Lakes! The fishing here sucks compared to Lake Superior,Lake Huron,and Lake Michigan!
