I will tell you it was not dry at all crisp on the outside and tender and juicy on the inside. Smoking is using indirect heat generated by a fire......that will also generate smoke. The indirect heat is the same as low heat, but the heat is still Generated by a fire.....that contains smoke. The smoke is still present wheather or not your meat is close or far away. We have been cooking meat on an open flame since the inception of fire.
