So, I'm making a smoked turkey tomorrow. Today I am brining it. For those of you who don't know, brining is when you submerge the meet in a solution of water and salt. Through osmosis, the salt is pulled into the turkey, along with any other spices that you have added to your brining solution. My brine consisted of:
2 gallons of water
1 cup of salt
1 cup of brown sugar
1/2 of white wine (not cooking wine)
1/2 cup of Worcestershire sauce
1 tbsp of dried rosemary
1 tbsp of thyme
4 tbsp of ground black pepper
So now the bird is submerged in the brine (in the fridge). I'll leave it in for about 12-14 hours.
I'll post up picks when I get to actually cooking this thing tomorrow.

About 12 pounds. I honestly don't know if it is enough, but I think I might inject it with something beforehand anyways. I'll also baste it with butter.

Some things have to be done that way. Smokers take forever to cook, and if you really want your meat to absorb the flavor, the more time the better. I marinate steak for a day if possible, too.

Pretty much. I figure this bird should take around 8 hours or so. I'd rather not have dinner at 4 in the morning on sunday.

Supper 07-04-2008, 11:27 PM You might have been lucky if you told your butcher your plan. Most places inject them with the solution to make them more moist for the average joe thats trying to cook turkey dinner. All it does, IMO, is make em saltier and taste less like turkey.
Nothing like a naked bird done up with some cajun seasoning mixed with whiskey (if its good with water, its better with beer and best with whiskey :D ) injected in it and dropped in the fryer.

And yeah.. I always start prepping my food a couple days in advance (pref 2-3 days of marinating). It's much better that way.
Take an average steak, and if you marinate it correctly it will turn out SOOOO damn good you will wonder why you ever paid $13.00+ for a single slab of meat..

Well, I waited as long as I could, but none of you fuckers showed up, so we went ahead without you guys. Turned out pretty damn good. It was actually finished about 2 hours before I was expecting it to be done, which forced me to rush everything else but it all worked out in the end. I'll post some pics in a bit.

meh. Anything will kill a person in strong enough doses. I've never heard of anything related to smoke curing meat. Think about how many thousands of years that the only methods employed for preservation were smoking or salting the meat.

I'll be getting a smoker later in the month from a guy who's moving back to the states. I don't think I'll cook anything like that though! Just stick with steaks and such. I cooked one a couple weeks ago in the smoker (had marinated for about 2 days prior) and it was DAMN good!
Now that that fag latin is gone, I smoked a couple of chickens tonight. They came out extremely juicy and tender. I think I'm starting to get the hang of this.

For the smoke I used a combination of hickory and apple. I would also mop it with some olive oil mixed with fresh herbs every 45 minutes or so as well.
