czarofzar 07-01-2007, 04:13 PM I'm trying to cook a 13 pound turkey. Like right now! Anyone know how to make gravy out of the juices? Really would appreciate it before the flipping timer runs out 2 hours from now. rodney87 07-01-2007, 05:10 PM Well you'll have to wait till the turkey is done cooking anyways. When its done pour the juices into a pot, or better yet make the gravy in the pan you cook the turkey in. That way you dont waste those tastey little brown bits on the bottom, thats where all the flavor is. Suck some of the fat off if you dont like a fatty gravy and set it to a boil, getting up all the stuff stuck to the bottom. Then mix up some corn starch in a little water and stir that into the juices till its as thick as you want it (It'll be as thick as its gonna get once its back to a boil). Salt and pepper to taste. If you dont end up with enough gravy then you can always add chicken broth till you get how much you want, then thicken. And if you wanted to use the fat to thicken it you'll need some flour and a little extra time. Edit* if you use extra broth for more gravy be sure to use the no/low sodium type, or it could get to salty when its done czarofzar 07-01-2007, 05:58 PM got it thx! 1 bad 7 07-01-2007, 06:44 PM If you add flour be careful and add it in small amounts! I've made the mistake of adding too much at once in the past, and proceeded to spend the next 10-15 minutes trying to get it all mixed in. :( Speaking of cooking - I think I'm going to make some Japanese steakhouse-style rice tonight. Start with plain white rice, add some soy sauce, Asian mustard, egg, and sesame seeds... good shit! Maybe I'll pick up some fresh veggies to go along with it.
